Commercial Kitchen Exhaust in Jakarta — Hoods, Ducting & Make-up Air

A commercial kitchen with a badly designed exhaust announces itself instantly: smoke drifting into the dining room, greasy walls, and a dining-area AC losing the fight against hot air from the cook line. In 12 years of HVAC practice, restaurant complaints almost always come back to two numbers nobody calculated: hood extraction capacity (CFM) and replacement air supply (make-up air).

We design and install complete kitchen exhaust systems: stainless steel hoods with grease filters, galvanized ducting with cleaning access, heat-rated exhaust fans, and fresh-air supply so the kitchen never runs at negative pressure. The principle is simple — air you exhaust must be replaced, or the smoke will find its own way into the dining room.

Scope of work

  • Stainless steel hoods — custom-fabricated wall-mounted or island hoods with baffle filters and lighting.
  • Exhaust ducting — galvanized ductwork with grease-tight joints, proper slopes and cleaning access panels.
  • Exhaust fans — centrifugal or axial units rated for heat and grease, with vibration and noise isolation.
  • Make-up air — filtered replacement air supply so doors do not slam and the dining-room AC stays stable.
  • Cleaning & maintenance — grease removal from hoods, ducting and fans — essential fire prevention.

Cost estimate

Baseline prices for kitchen exhaust in Jakarta, 2026:

  • Custom stainless hood — from IDR 3.5 million per linear metre.
  • Galvanized exhaust ducting — from IDR 350,000/m² installed.
  • Small restaurant package (2–3 m hood + ducting + fan + make-up air) — typically IDR 35–80 million.
  • Full grease cleaning — from IDR 2.5 million per visit.

Final pricing depends on the duct route to the discharge point and the cuisine — heavy-grease cooking such as grills needs more capacity. The survey and BoQ are free.

How we work

The workflow is identical on every project, from a shop-house to a factory — so you always know exactly where things stand:

  1. Site survey (free) — we visit, measure the area, check installation routes, electrical capacity and structure. In factories we also note the production processes that drive heat loads.
  2. BoQ & working drawings — within 2–5 working days you receive a written bill of quantity, material specifications and drawings. The price we quote is the price we invoice.
  3. Installation — K3- and BNSP-certified crews work to the agreed schedule, including nights and weekends when production cannot stop.
  4. Testing & commissioning — airflow, temperature and electrical readings are documented in a commissioning report, followed by handover with a written 12-month warranty.

We install kitchen exhaust for standalone restaurants, hotel kitchens and mall food-court tenants across Greater Jakarta. If your restaurant also needs dining-room cooling, see commercial VRF; for ingredient storage there is cold storage — we often build all three in one project. Exhaust ductwork itself is covered in detail under ducting installation.

Kitchen Exhaust — Common Questions

How much exhaust capacity does a restaurant kitchen need?
It depends on the hood type and the equipment under it — a rough range is 300–550 CFM per square metre of hood opening, from light to heavy cooking. We calculate the exact figure during the free survey.
Why does smoke still reach the dining room despite a hood?
Almost always because the kitchen runs at negative pressure without enough make-up air, or the hood's extraction is below the equipment's needs. Both are measurable and fixable without a full rebuild.
How often must kitchen exhaust ducting be cleaned?
Heavy frying/grill kitchens: every 3 months. Light kitchens: every 6 months. Grease accumulation in ducting is the leading cause of commercial kitchen fires.
Can you install exhaust for a mall tenant?
Yes — we routinely coordinate with mall engineering on riser routes, night work windows and the building's technical standards.
